Here are various sources for primary source documents, if you want commentary, Truth-Seeker's suggestion is it.
You could read the actually minutes of the Council of Chalcdon ($50 not a bad price for a 3 volume set)

Or from Google Books "History of the Councils of the Church: From original Documents vol.III", It contains not only documents related to Chalcedon but of the councils leading up to it, i.e. Ephesus and the "Robbers Synod"

Just make sure the minutes are not tainted. What went on at the Second Council of Ephesus is much different from what went on at the "Robbers Synod" (these two names referring to the same event, the former is the non-Chalcedonian name, the latter is the Chalcedonian name). |
